The outer leaves are removed and the core is cooked, fermented and distilled. Sotol has a remarkable history that goes back hundreds and hundreds of years- used to eat, as a weapon, to heal ailments, and later as a distilled spirit. After harvesting, the sotol plants make their way to the Desert Door distillery. Here, proprietary ovens are used to cook the plants and extract the precious sugars.
